Panko Coated Chicken with Mustard Pan Sauce

Wanted to share this receipe with you because it's quick and delicious.
Ingredients
•4 (4-6 oz.) Boneless, skinless chicken breats halves
•1 Large egg
•1 Tbsp. Fresh chopped italian parsley
•4 Tbsp. Robert Rothschild Farm Cranberry Pomegranate Mustard**, divided
•1 cup Panko
•2 Tbsp. Olive oil
•1/2 cup Low-sodium chicken stock
•1 Tbsp. Chilled unsalted butter
Instructions
•Whisk egg, parsley and 1 Tbsp Cranberry Pomegranate Mustard in a large bowl. Place chicken in egg mixture; turn to coat. Sprinkle chicken with salt and pepper. Dip each chicken piece in panko; turn to coat. Heat a large nonstick skillet over medium-high heat. Add chicken; cook until brown and cooked through, about 4 minutes per side.
•Transfer chicken to plates. Add broth mixture to skillet; boil until reduced to 1/2 cup, stirring ocassionally, about 4 minutes. Add butter; whisk until melted. Taste and season with salt and pepper, as needed. Spoon sauce

Nevada State Firefighter's 75th. Annual Convention

We're helping our local Winnemucca Volunteer Fire Dept. kickoff their annual convention with a Wine Walk. This is open to the public. Registration starts from 3:30 - 4:30 in front of the store. For $15.00 you will receive a Wine Glass, a map of participating downtown stores and two hours of fun!

We'll be pouring "Firehose" Gewürztraminer. This off-dry Gewürztraminer doesn’t just extinguish the fire ignited by your favorite spicy foods, it adds a whole new dimension of flavor and refreshment. Cinco De Mayo

Here is a receipe from Pasta Partners to put a little fiesta in your Cinco de Mayo
Chicken Enchiladas
Serving Size: 6-8
2 lbs cubed Chicken Breast meat
1 packet Pasta Partner's Garlic Herb sauce (Available at Second Street Seasonals)
3 Tablespoons Butter
2/3 cup Milk
1/2 cup Tequila
Salt and Pepper to taste.
18 Corn Tortillas (We liked flour also)
2 1/2 cups Shredded Mozzarella & Cheddar Cheese
Instructions: Preheat oven to 350 degrees. In a skillet, sauté Chicken in butter and Tequila until cooked and tender, approximately 4 to 5 minutes. Remove from heat and drain juices into 2 quart sauce pan. Mix juices from cooked chicken with milk & Pasta Partners Garlic Herb sauce, and cook on medium heat until thickened, about 7-10minutes. Stirring after each minute or so. Remove mixture from heat and pour 1/2 cup sauce into cooked chicken meat with 1/2 cup shredded cheese mixture. Stir until chicken is well coated. Warm a tortilla in a skillet until soft, 30 seconds or so. Dip warm tortilla in remaining sauce mix and fill with 2-3 tablespoons of chicken mixture, roll up and put in greased 9” X 13” pan... Fill remaining tortillas and line up to fill pan. Spread remaining sauce over pan of enchiladas and cover with shredded Mozzarella/Cheddar cheese mixture. Bake in 350 degree, preheated oven for 25 minutes. Serve warm. Great garnished with Guacamole, Sour Cream and Salsa. May freeze uncooked for up to 3 weeks.

Quite often we are asked what the meaning of a specific rose color is. Here is a quick reference guide.

Red
There’s nothing secret about the red rose’s symbolism of love. Valentine’s Day would hardly exist without this bold and dramatic bloom. The ultimate symbol of romantic love and enduring passion, the red rose also conveys respect and the creative spirit of love. Representing true love stronger than thorns, the red rose is known universally as the lover’s rose.

White
Representing, humility, purity and innocence, the white rose - often referred to as the bridal rose - is associated with young love. In Scotland, when the white rose bloomed in autumn, it was seen as a token of early marriage. Also symbolizing truth and reverence, it sends a message of loyalty and says "I am worthy of you."

Yellow

Zesty Grilled Chicken

12 chicken breasts

16 oz. 7up soda

16 oz. Kraft Zesty Italian salad dressing

Combine equal parts of 7up and Italian dressing in a heavy ziplock bag. Place chicken breasts in marinade covering chicken completely. Marinate overnight if possible. Grill on medium heat for 14-16 minutes turning twice.

Basque Heritage Celebrated

We'd like to share one of the recipes From The Kitchen Of Rosie Uriguen. Rosie and Syl owned and operated The Martin Hotel from 1950 to 1972. Their Basque hospitality was known throughout the western United States.

Solomo/Pork Loin...In a large pan, mix olive oil, paprika, granulated garlic, salt pepper, parsley as well as any other herbs you like, ie: rosemary, basil, thyme or herbs de Provence which is a combination of herbs. Place whole loins in mixture, rubbing all sides, then place in a large roasting pan. Foil the bottom of the roaster, to keep the paprika stains to a minimum. Cover and let set for at least 3-4 hours or refrigerate overnight. Bake in a 350 degree oven using a meat thermometer to give correct cooking time. Cut 2-3 sweet onions (amount in accordance with amount of pork) in thin slices, place in fry pan with olive oil and simmer until transparent, add desired amount of minced garlic, salt and pepper. Once onions are completely limp, add jarred roasted red peppers and continue to simmer slowly, stirring often. Once the loin is cooked, let it rest about 10 minutes. Slice into medallions, then spoon roasted pepper mixture over the top. Delicious!
